The warm summer days are upon us once again. The markets and stores are starting to fill up with fresh seasonal fruits and vegetables. There is inspiration all around us from the vibrant colours of the rainbow; Swiss chard and beets to the sweet smell of peaches and strawberries.

I sometimes find it hard to choose, I want to take it all home with me. Since my free time these days seems to be pretty much nonexistent, I usually just grab the freshest looking ingredient that I know I can make a quick snack with and know I don’t have to turn the oven on to enjoy.

My son was recently given the task of bringing a salad to a gathering. We were chatting back and forth by text about what he was thinking of making. He says to me, “what do I need for a cucumber and tomato salad?” I don’t think he thought it was quite as humorous as I did when I said, “um, cucumbers and tomatoes.”

I gave him my recipe that has a slew of ingredients and then a while later I get a text with a picture of what he made. He added watermelon! That is what I love about him; he takes a common tried and true recipe and gives it his own twist. It turned out to be a big hit.

Now I will have to try it sometime.

Since I already shared my cucumber and tomato salad with you a while back I won’t do that again but I did find inspiration from the beautiful deep red strawberries that lured me over to their display with their unmistakably sweet fragrance.

Have fun with this recipe and feel free to change it to your liking.

Spicy Strawberry Salsa
½ quart fresh strawberries hulled & diced small
1 small yellow bell pepper diced
1 small jalapeno diced
1 tbsp diced red onion
1 tbsp fresh squeezed orange juice and a few grates of orange zest
Juice of half a lime and a few grates of lime zest
2 tsp balsamic vinegar
1 tsp honey
1 tbsp fresh chopped cilantro
1 tbsp fresh chopped basil

You can make a non spicy version by leaving out the jalapeno. You can add things like mint, pineapple or even peaches.

It is nice slightly mixed in with Greek yogurt or sour cream and served with toasted pita chips.
